Okay, I’ll do my best to answer the question posed. I’ve only watched up through the Sejong episodes so I’m a few weeks behind (because I watch via the KBS World yt channel, which may or may not be accessible where you live, but I’ll link to anyway). Trips are usually 2-3 episodes long (and most of the time there will be an episode that is half the ending of one trip and the start of another), but I’ll group them by types of trip and give you the season 3 episode numbers to help you find other subbed sources. Also, despite what the translations may say, the guys and crew persist in calling him Donggu (his birth name), so if has “Yoon Shi Yoon” as his name listed in any translation, that’s the subber assuming we don’t know who Donggu is.
I’ll choose what episodes I think are probably the best for YSY stans but honestly he’s only been on the show since May so I see no reason why you couldn’t eventually binge all ~25 eps (as of to date):
This is his first trip with the guys, and worth it just to watch them kidnap him in the traditional 1N2D rite of initiation. It also helps solidify his personality on the team.
It’s fun watching him literally run around the campus (zoooooom!) and see all the fangirls, plus you definitely need to watch his “lecture” that he gives as a mission. It’s full of sincerity and thoughtfulness.

Where YSY is predictably ruthless in his strategy to win the game, with a surprise twist.
Season 3 ep #137: (the first part of) Travel With Your Friends(part 1)
For the shallow reason that you get a shirtless YSY in this ep, but if you’re at all a fan of Park Bogum, the whole trip is fun to watch Bogummie be his adorable self.
He acts out cheesy scenes from DotS! He cooks! He farms cabbages like a beast!

The part of the show where they’re on the island shows off YSY’s practical skills and his general intelligence. Maybe it was his Marine training that taught him how to make that fire pit?

At the time of this posting, part three hasn’t been uploaded to the KBS youtube channel, but I love how YSY totally dorks out and explains all the historical stuff – but then predictably loses in all the silly games the boys play.
Honestly, I don’t necessarily think you could go wrong with watching any of his episodes, especially since it helps to solidify his personality on the show (he’s really, really unlucky/terrible at the silly games, even though he’s the smartest guy of the bunch). But these are the eps/trips I think a fangirl would probably enjoy the most, or at least get you started on the way to becoming a 1N2D addict. ^_^
