Coworker who’s originally from the bayou made gumbo and brought some in to work so I guess this is technically my first “authentic” gumbo I’ve ever had. It was satisfying and hit the spot since I apparently really do subsist on tortilla chips on my days off.
Also my manager brought in her “tamales” which, y’know, are tasty but probably the most opposite of “authentic” one can get.
